How to Prepare
As usual, we have to prepare the ingredients first before cooking. So, rinse and dice the scotch bonnet pepper and the green pepper. Peel, rinse and dice the onions. Break and whisk the egg. Rinse, scrape and dice the carrot. Set each of these ingredients aside for later use.

Pour some vegetable oil into a clean pot. Add some onions and stir fry till it’s translucent. Add the minced garlic and ginger.
Next, add the minced meat and stir fry till the colour changes to brown.
Once the desired colour is achieved, add the green pepper, scotch bonnet pepper and carrot and stir.
Keep stirring as you also add the curry, thyme, stock cubes and salt.
Gradually add the boiled rice to the pan. Stir well to combine the rice and the vegetables.
Pour some vegetable oil into a clean frying pan. When the oil heats up a bit, add the whisked egg to the pan. Scramble it before adding it to the rice and vegetable.
Stir well to ensure an even mix of all the ingredients. Cover the pot, reduce the heat and allow the ingredients to simmer for a minute.
Turn off the heat and serve hot.
