On our menu, today is a shredded beef sauce. This sauce is an absolute delight, one that will have you believe that the Christmas and New Year celebrations are not over yet. This sauce is easy to prepare and except for the soy sauce, all other ingredients used in its preparation are well known.

However, you may find the regular beef sold in Nigerian markets too tough for this sauce. If you can, go for tender beef cuts from meat shops. Otherwise, either use a meat tenderizer for cooking the meat or hit the beef cuts with a rolling pin to soften it. Having said that, join me for another cooking adventure. How to Prepare
Cut the beef into strips. Rinse the shredded beef. Season it with onions, garlic, stock cubes, and salt. Put it in a sealable bag or a clean bowl with a lid. Marinate in a refrigerator for at least 30 minutes.

Now, prepare the vegetables. Peel the onion. Cut the green pepper open with a knife and deseed it. Scrape off the back of your carrot. Rinse and cut the carrots and peppers into long strips. Mix the soy sauce with black pepper and vegetable oil. Set aside for later use.
After marinating, pour a little oil into a frying pan. Set it on medium heat. When it heats up, add the minced garlic and ginger. Sautè for a minute; while you are doing this, be careful not to burn the garlic and ginger. Add the marinated beef and stir fry till it’s cooked. Please note that for best result, the shredded beef should be fried in batches.
When the last batch of beef is scooped out of the oil, discard the oil and add fresh oil to the pan. When it’s hot, add onions to the oil and saute for 2 minutes. Add the peppers and saute for a minute. Add soy sauce mix to the pan. Make a light paste with cornflour and water and add it to the pan as well.
Allow simmering for two minutes. Add the fried beef to the pan. Stir and taste the sauce. Adjust the seasoning if need be. Then, allow the content of the pot to simmer for 2 more minutes. Turn off the heat and serve the sauce with boiled rice or noodles.
